You in the first paragraph specify that you are a "plant-based" vegan (which I believe is redundant). I think "plant-based" should be "whole-food" — your avoiding of processed foods is something that aligns with "whole-food," \not "plant-based."

The shelves of supermarkets are full of vegan (plant-only) highly processed foods, including refined sugar, foods made of refined flour, fruit juices (very different impact on the body from whole fruit), and an entire section devoted to highly processed foods specifically marketed to vegans ("field roast," imitation sausage, imitation bacon, etc.) A person on a *whole-food* plant-based diet would avoid all those plant-based foods.
