I went from a low-carb diet to a whole-food plant-only diet ("whole food" means no processed foods), and I had the experience exactly as the article describes: initially, a fair amount of gas, but as I continued the diet and the population of my gut microbiome shifted, the problem went away. Unfortunately, I think many people quit before their body adjusts, since it does take two or three weeks to shift the microbe population.
