Although I don't eat meat, dairy, or eggs, I don't like the vegan diet because it allows refined foods and highly processed food, both of which I avoid because I follow a whole-food diet.
I also don't like the term "plant-based" because my generally also includes fungi. I call it a whole-food non-animal diet (which thus includes both plants and fungi).
I follow the diet for reasons of health, making sure to get a good variety and distribution of foods — I use Michael Greger's Daily Dozen and David Heber's color palette as templates. I make up most of my own recipes, which generally don't have common names (though some are analogues: tempeh chili, for example, or tempeh curry). — I make my own tempeh, using a 50-50 mix of beans (or lentils) and (intact whole) grain.
